Bitter Melon and Beef

Instructions

  1. Slice bitter melon or zucchini. If using bitter melon, add to pot with water, generous salt, and generous sugar to remove bitter taste
  2. Marinate beef with soy sauce, swirl of cooking wine, and corn starch (beef should be drenched)
  3. Add canola oil to wok and turn on flame to medium high
  4. Add beef and cook until mostly done
  5. Add sliced bitter melon or zucchini
  6. Add a small teaspoon of black bean sauce (not too much, this can be very overpowering)
  7. Mix well and taste and season as needed
