Bitter Melon and Beef
Instructions
- Slice bitter melon or zucchini. If using bitter melon, add to pot with water, generous salt, and generous sugar to remove bitter taste
- Marinate beef with soy sauce, swirl of cooking wine, and corn starch (beef should be drenched)
- Add canola oil to wok and turn on flame to medium high
- Add beef and cook until mostly done
- Add sliced bitter melon or zucchini
- Add a small teaspoon of black bean sauce (not too much, this can be very overpowering)
- Mix well and taste and season as needed
