Instructions
- Preheat oven to 350 degrees
- In a small bowl, add the ground flaxseed and water. Let this sit for 5 minutes to allow the flaxseed to hydrate.
- In a large bowl, mash the bananas until smooth. Whisk in the olive oil, flaxseed, and salt.
- Incorporate the cocoa powder and whisk until the batter is dark and glossy.
- Gently stir in the whole wheat flour until just combined. Over-mixing whole wheat can make the brownies tough, so stop once the white streaks disappear.
- Fold in the chopped walnuts.
- Pour the batter into the pan and smooth the top. Bake for 20 minutes.
- These are best when slightly underbaked. A toothpick inserted into the center should come out with a few moist crumbs, not liquid batter. The brownies will still continue to bake as it cools down.
